This guide was developed to help students in West Virginia learn healthy eating habits and attitudes, primarily by preparing and eating food. The guide suggests activities, recipes and resources to help students: (1) enjoy a variety of nutritious foods; (2) feel competent about trying unfamiliar foods; (3) understand cultural influences on food preferences and eating habits; and (4) appreciate the similarity and diversity of the world's peoples. The guide is divided into eight sections representing major cultural regions of the world: Latin America, Europe, Middle East and North Africa, Africa south of the Sahara, Russia and Eurasia, East and Southeast Asia, South Asia, and Australia and Oceania. Each section presents classroom and nutrition ideas, classroom and cafeteria recipes, and a discussion of the food pyramid. The guide's appendix contains West Virginia state nutrition standards for schools, dietary and food pyramid guidelines, a 92-item bibliography, and a 13-item resource list. (LBT)
