This handbook is designed to help students in Texas prepare for Future Farmers of America (FFA) poultry judgings. The handbook is organized into five major sections that cover the following topics: organization of the Texas FFA poultry judging contest; judging production hens; judging production pullets; grading ready-to-cook broilers, fryers, or roasters and turkeys; and egg grading (interior and shells). The sections on judging include information sheets on judging standards, exercises for self-testing, and photos and illustrations of various procedures used in the judgings.
