Child Care Recipes: Food for Health and Fun. From USDA's Child and Adult Care Food Program.

Intended to help child care providers show young children how to make healthy food choices, this collection contains standardized recipes and kitchen tips to help providers put together great tasting, nutritious meals that will appeal to young children. The recipe instructions are geared for groups of 25 and 50, and have been tested for product quality, consistency, and yield in child care centers across the country. The collection begins with a section explaining the recipes and how to use them; this is followed by a section of 43 information cards addressing a variety of food service topics such as food storage, and buying and cooking tips. The bulk of the collection comprises the 141 recipes and variations, grouped in the following categories: (1) grains/breads; (2) desserts; (3) dips, sauces, and toppings; (4) salads and salad dressings; (5) sandwiches; (6) snacks; (7) soups; and (8) vegetables. The collection concludes with a guide to safe food handling and sanitation, and a list of resources. (HTH)
