A survey of 86 Head Start staff and 40 parents/caregivers indicated that most staff felt children should taste every food; caregivers believed the opposite. Despite positive responses about ethnic foods, a majority of both groups felt teaching about ethnicity was not the responsibility of public schools. Staff training in cultural awareness and communication was recommended. (SK)
