Sustainability in Housing and Dining Operations
Pursehouse, Clive
New Directions for Student Services, n137 p41-52 Spr 2012
Residential life, housing, and dining operations have the potential to touch all students by integrating sustainability issues into all operations. There are numerous ways that sustainable practices are enacted in campus housing and dining. Although faculty and staff in academic affairs may look strategically at how sustainability can be integrated into the curriculum and where to align it in the appropriate academic department or college, or how to establish new sustainability majors or certification programs, residential life, housing, and dining operations have the potential to touch all students by integrating sustainability issues into the complete operation. The everyday reality of housing and dining operations and the educational missions of residential living programs present a unique opportunity to be an integral part in the campus's educational mission for sustainability. With such a large role to play in the creation of a sustainable campus, university housing, dining, and residential life programs need to take seriously their ability to influence sustainability on campus. Transformative learning allows students to see their own impact as they explore and develop behaviors and habits that contribute positively towards a more sustainable future.
