"Hidden Beauty, Assembling Lipids": Modular Hands-On Outreach Experiments Showcasing Lipid Assembly Chemistry

Successful demonstration of lipid assembly chemistry to a general audience can be challenging on both physical (nanoscopic dimensions of lipid assemblies) and intellectual (complex, interconnected concepts) accounts. Quite often, an instructor has to leave key concepts out of what is being offered due to time constraints, which unfortunately hampers students' developing a coherent understanding. In this demonstration, we present an approach to address this conundrum through modular and progressive learning. Consisting mainly of three straightforward hands-on experiments, this demonstration enables most of the key concepts in lipid assembly chemistry to be conveyed to interested students. Lipid phase separation, an important area of current membrane biophysics research, is also covered.
