Community Gardening Project: Meredith College Students Explore Sustainability, Organics
Roubanis, Jody L.; Landis, William
Journal of Family and Consumer Sciences, v99 n3 p55-56 2007
Consuming locally grown foods promotes sustainable development and individual wellness (Waters, 2006). In the United States, the average food product travels 2,000 miles before reaching the consumer (Schlosser, 2001). This distance between producer and consumer is one reason that today's youth lack an understanding of the origin of the food they consume. Community gardens are one way to target these issues and promote a sense of community. This article describes the Three Sisters Garden which was developed through the Foods and Nutrition program at Meredith College in spring 2005. The initial impetus for the garden project grew from curricular needs in the nutrition and family and consumer sciences (FCS) programs for students to understand how and where food is produced. Through a variety of activities, students learn about the principles of organic farming and other sustainable methods for growing edible plants. Students experience the wonderment of growing a food product from seed to harvest. The garden has fostered a sense of community on campus that transcends disciplines. Reflecting the mission of AAFCS, bringing people together to improve the lives of individuals, families and communities, the garden has inspired cross-campus collaboration.
