These three instruction manuals are designed as aids for faculty and staff teaching consumer education, nutrition, and parenting. They include resources for teaching limited English speaking students. A 17-page Vocational English as a Second Language (VESL) annotated bibliography precedes the instruction manuals. Each manual consists of 18 units. Each teaching unit includes learning objectives, an outline of suggested content, in-class activities, self-study and evaluation suggestions, and a list of resources. The resources section lists materials in written and video availability and cross-references to VOICE (Vocational and Occupational Information Center for Educators) and the VESL bibliography. Units vary in length from one to three hours of classroom instruction. The materials may be used with students in community colleges and the community. A VOICE annotated bibliography concludes each manual. Representative topics in the consumer education manual include advertising, contracts, credit, health care, housing, taxes, and money management. Some nutrition units are food labeling; food shopping; nutrition for adolescence, athletics, children, older adults, and pregnancy; and weight control. Representative parenting units are birth control, blending families, child abuse, pregnancy, infant care, child development, and sex education. (YLB)
