Nutrition Education: A Cooperative Effort. Teacher Guide, Grades K-6.

This guide for integrating nutrition education into the curriculum is an outcome of a dietary needs assessment of elementary school children in Lowell, Massachusetts, Public Schools. Although the original project was directed to transitional bilingual students of Hispanic and Portuguese origin, the food consumption survey included a multi-ethnic control group. The results indicated that all children had similar nutrition education needs and implied that all students would benefit from the educational program. The nutrition education tools developed as a result of the project have multi-ethnic application for maximum acceptance and usage by all school systems. While the guide provides objectives and activities for each grade, it can be consolidated for use at three levels: Introductory (Grades K-2); Intermediate (Grades 3-4); and Advanced (Grades 5-6). Suggested learning activities have been adapted from the topics/skills of an existing bilingual curriculum guide and expanded for greater effectiveness.
