A Study of School Lunch Programs in Pennsylvania.
Gluck, Dolores K.; Baker, Michael E.
Major areas of concern of Pennsylvania school food service management--student participation, labor cost, food cost, and uses of management information--are analyzed and recommendations are made. The management information study is an analysis of the findings from a six-county sample survey of record keeping practices and personal perceptions of 41 food service administrators in the southwestern Pennsylvania region. The method used for the participation, labor cost, and food cost studies was the design of three models to determine the most significant factors that affect each of these areas based on data collected from a variety of sources for 84 of the 94 programs in the six-county region. The findings should be representative of most districts across the state since the programs in the areas studied represent a wide variety of program sizes, each service type (unit, bulk satellite, and mixed), management type (degree, nondegree, and management company), geographic location (rural, urban, and suburban), and economic status.
