Simplified Recipes for Day Care Centers.

The spiral-bound collection of 156 simplified recipes is designed to help those who prepare food for groups of children at day care centers. The recipes provide for 25 child-size servings to meet the nutritional needs and appetites of children from 2 to 6 years of age. The first section gives general information on ladle and scoop sizes, weights and measures, canned foods and can size conversions, and amounts of various foods needed to serve 25 young children. The remaining sections give recipes for soups, main dishes, vegetables, fruits, desserts, bread and cereals, and salad dressings. Each recipe is presented in table format with a list of ingredients, a list of quantities needed, blank sections for converting ingredient quantities from the 25-portion size to the amount required for the size of the day care center, and a list of steps for food preparation.
