Chemical Speciation Analysis of Sports Drinks by Acid-Base Titrimetry and Ion Chromatography: A Challenging Beverage Formulation Project
Drossman, Howard
Journal of Chemical Education, v84 n1 p124-127 Jan 2007
Students have standardized a sodium hydroxide solution and analyzed commercially available sports drinks by titrimetric analysis of the triprotic citric acid, dihydrogen phosphate, and dihydrogen citrate and by ion chromatography for chloride, total phosphate and citrate. These experiments are interesting examples of analyzing real-world food and beverage samples, but they do not focus on the complexity of determining multiple species to formulate a beverage product or on the speciation analysis of citrate and phosphate.
