Impact of Service-Learning on Undergraduate Dietetics Education

Qualitative research was conducted with undergraduate nutrition majors at the University of Central Arkansas to explore the impact of service-learning on personal and professional development. After participating in the program, the dietetic students (n 20) wrote reflection papers. The personal impact sections of the reflections were coded and four themes emerged: (1) feeling of purpose and impact, (2) general experience gained, (3) pediatric experience gained, and (4) the value of service-learning in higher education. The findings demonstrated beneficial outcomes for the nutrition majors implementing the program as well as for the research recipients (kindergarten children and parents).
