Curriculum Guide for Hospitality Education. Part II. Exemplary Project.

This second of a two-part study designed to develop a hospitality education program model for Hawaii's community colleges is based on the primary data gathered in a survey of the hospitality industry characteristics, manpower requirements, and employment demands. (Survey data is reported in volume 1 of the study.) The introductory section of this document describes the hospitality industry's growth, implications for education, and the development of the project. The introduction is followed by descriptions of the systems approach to program planning, the hospitality education program model, and its curriculum design. Seven major curriculum areas included in the program are then identified and the performance objectives of the core learning modules and specialized learning modules are presented. Finally implementation plans based on existing curriculums and courses are discussed. The appendexes comprise the majority of the document and include course outlines for the core learning modules and specialized learning modules and questions for project implementation. (BM)
