Foam Fractionation of Lycopene: An Undergraduate Chemistry Experiment

A novel experiment for the extraction of lycopene from tomato paste by foam fractionation is described. Foam fractionation is a process for separating and concentrating chemicals by utilizing differences in their surface activities. Extraction of lycopene by foam fractionation is a new method that has not been previously reported in the literature. This experiment acquaints students with the concepts of green chemistry, the isolation of a natural product, and foam fractionation. In addition it provides experience with extraction and UV-vis spectrophotometric analysis. This experiment is suitable for an undergraduate laboratory course. (Contains 2 figures.)
