This guidebook provides a combination of guidance and policy information that will help California sponsors to plan, purchase, prepare, and serve nutritious meals and snacks that comply with the Child and Adult Care Food Program (CACFP) meal pattern requirements. Sections 1 through 4 list foods that may be used for the meat/meat alternate, fruit/vegetable, bread/bread alternate, and milk components. Section 5 lists other foods commonly served that do not count toward any component of meal pattern required by CACFP. The sixth section contains examples of how to fill out menu records and use the factors found in sections 1 through 4. Sections 7 and 8 contain information about sanitation and storage and the infant meal pattern. Appendices, included in the final section, contain checklists, records, worksheets, and policy memos.
