This cookbook contains 337 recipes from 122 countries. A special effort has been made to include as many recipes as possible from countries in Africa, the Middle East, the Caribbean, and Latin America. The book is arranged geographically, with recipes arranged by continents or regions. Countries with similar cooking traditions appear together. Each section opens with an introductory description of the continent or region and gives general information on the types of recipes it offers. Along with each country's listing is a description of the kinds of foods and meals that the people of the country grow, enjoy, and prepare. Outline maps accompany each country's description; most maps show the location of the country in relation to those around it. The document includes a preface, a section on "Getting Started," glossary of terms, and an index. (SG)
