Science Study Aids 1: Dehydration for Food Preservation.

This publication is the first of a series of seven supplementary investigative materials for use in secondary science classes providing up-to-date research-related investigations. This unit is structured for grades 9 through 12. It is concerned with the osmatic dehydration of fruits. The guide provides students with information about food preservation techniques, particularly osmovac. The first part of this guide provides the teacher with: (1) materials needed; (2) suggestions to facilitate classroom use for the investigations; and (3) suggested reading. The second part provides students with background information and four investigations. The investigations are based on the biological principle of diffusion through a membrane: osmosis. They are: (1) solute exploration; (2) time and water loss; (3) sugar concentration and water loss; and (4) emergency water purification. Each investigation consists of: (1) materials needed for a four-student team; (2) procedures; (3) questions for thought; (4) extending the investigations; and (5) suggested reading. (HM)
